How to make sambal goreng tempe

One of my favorite Indonesian food is tempe. Growing up I ate a lot of this soy product. And I always looked up to the people who could make tasty dishes with tempeA while ago I attended the Temp(e)tation workshop during Indonesia week in the Markthal Rotterdam. I never knew you could make so many more tasty things with tempe. I was so inspired to make my own tempe dish and today I finally made sambal goreng tempe, and found out it's easier than I thought.

First things first, what is tempe. It's made by fermented soy beans and it's very healthy and nutricious. Read more about tempe. At the Temp(e)tation event I learned to make my own tempe from scratch. Well, from soy beans. First you need to cook the beans (2 days), put some special mold on it (yes, molds) this will bind the beans and then wrap it in leaves and then wait for a couple of days. This sounds easy but I wasn't (at least not for me) and you have to be very patient (not really my strength). After a couple of days waiting unfortunately my tempe didn't looked like how it supposed to look. There's no picture because it looked like if it was about to run away. So for cooking today I will just buy the tempe at the toko.  

So this is the result, I'm pretty happy with the result and it tastes amazing!

This is the recipe for sambal goreng tempe

You need: 

  • 1 piece of tempe (cut in pieces) 
  • oil
  • 4 shallots (cut in small pieces)
  • 1 or 2 lombok (cut in small pieces) depends on how spicy you want it to be
  • 1 big clove of garlic (cut in small pieces)
  • 1/2 teaspoon trassi
  • salt
  • 1 cm laos (cut in small pieces)
  • 2 daun salam
  • 2 tablespoons gula djawa
  • 1 tablespoon ketjap manis
  • 1 teaspoon asem 

Heat some oil in a wok to fry the pieces of tempe. Get it out of the pan and put the tempe on some kitchenpaper. Heat some oil in the wok and put the shallots, lomboks and garlic in. Mix the trassi with some salt. Put the daun salam, laos and trassi in the pan. And last add the tempe, gula djawa, ketjap manis and asem. Mix it all together for approx. 5 - 10 minutes.
